Smoked Tri Tip

Smoked Tri-Tip: a MUST on your grilling menu this season!!

Directions
- 2-3lb tri-tip
- 2tsp salt
- 2tsp garlic powder
- 3tsp black pepper
- 3Tbls salted butter
Instructions:
- Pre-heat your grill/smoker to 225
- Mix all your seasonings together in a small bowl
- Season your Potts Tri-tip ensuring that you massage the seasonings into the meat. Let stand for at least 30 minutes.
- Place your Potts' Tri-Tip directly on the grates of your smoker. Close the lid and smoke until the internal temp is within 5-10 degrees of your target. (115 rare, 125 medium rare, 135 for medium). We do not recommend cooking past medium.
- When your Potts' Tri-Tip is near the correct internal temperature, preheat a cast iron skillet over high heat. Remove Tri-Tip from smoker.
- Put 2-3 TBLS of butter into the cast iron skillet and let it melt. If you want to add fresh herbs (rosemary, thyme, ect..) add them to the butter. Add the Tri-Tip to the sizzling butter and sear for 2-3 minutes per side. Continuously spooning the butter over the Tri-Tip.
- Remove from pan and let rest for 10-15 minutes before slicing. Remember to slice against the grain and that the grain changes in the Tri-tip.
